Ingredients:

  • 8 oz linguine pasta
  • 1 cup pumpkin puree
  • 1/2 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage leaves, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: red pepper flakes for a touch of heat
  • Optional garnishes: additional grated Parmesan cheese, toasted pine nuts

Instructions:

  1. Cook the Linguine:
    • Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Sauce:
    • In a medium saucepan, melt the butter over medium heat. Add the minced garlic and chopped sage leaves. Sauté for about 1-2 minutes until fragrant.
  3. Add Pumpkin and Cream:
    • Reduce the heat to low. Stir in the pumpkin puree and cook for 2-3 minutes, allowing the flavors to meld. Gradually add the heavy cream and chicken or vegetable broth, stirring to combine.
  4. Simmer and Season:
    • Let the sauce simmer gently for about 5-7 minutes, allowing it to thicken slightly. Season with salt, pepper, and optional red pepper flakes to taste.
  5. Combine Pasta and Sauce:
    • Add the cooked linguine to the sauce, tossing to coat the pasta evenly. If the sauce seems too thick, you can add a splash of reserved pasta cooking water to reach your desired consistency.
  6. Finish with Cheese:
    • Stir in the grated Parmesan cheese until melted and the sauce is creamy.
  7. Perfect for Postpartum:
    • This nourishing pumpkin linguine is not only easy to prepare but also ideal for postpartum recovery. Packed with wholesome ingredients like pumpkin puree and sage, it offers comforting flavors and essential nutrients to support your healing journey.
  8. Serve and Garnish:
    • Divide the creamy pumpkin linguine among serving plates. Garnish with additional grated Parmesan cheese, toasted pine nuts, and a few fresh sage leaves for an extra touch of flavor.
  9. Enjoy!
    • Serve your delicious pumpkin linguine immediately, savoring the creamy pumpkin flavor and the comforting aroma of sage.

Note: Feel free to customize this recipe by adding cooked and diced chicken, roasted vegetables, or sautéed mushrooms for additional flavor and texture.

Indulge in the ease of preparation and the nourishing qualities of this creamy pumpkin linguine, especially suited to provide comfort and energy during your postpartum period. Enjoy the comforting taste of autumn in every bite!
